::Veggie Casserole::

- 1-16oz. bag fancy frozen veggies or 1-16oz can Veg-all, drained
- 1 c. chopped celery (I do not put this in mine)
- 1 c. chopped onion
- 1 c. grated sharp cheese (it's better if you add more)
- 1/2 c. mayo
- 2 cans cream of chicken soup
- 1 stick of margarine
- 2 packs or (20) Ritz crackers

Cook veggies until tender, drain and season (if using Veg-all cans, open
cans and drain).  Mix all ingredients, rinse soup can with a little water.
Mix 2 cups Ritz crackers (crumbled) with 1 stick melted margarine.  Cover
top of casserole and bake at 400 degrees until brown.  (Check after about
20 mins, check the center and see if it feels done)

::Easy - Stewed Okra & Tomatoes::

::Ingredients::
- 1 pound fresh okra, washed, trimmed, sliced. - (frozen or canned is fine too)
- 1 can 14.5oz. stewed tomatoes
- 2 tablespoons finely chopped onion
- salt, to taste

::Directions::
Place sliced okra in pan; cover with water. Bring to a boil, lower heat to medium and continue to cook for 5 minutes. Drain water and add remaining ingredients. Simmer mixture for 15 to 20 minutes longer, until okra is tender. Add salt, if desired, to taste.

***Serve with some Cracklin Cornbread to sop up the juices -YUM-O!!!

::My Grandma's Corn Bread Dressing::

*This is my Grandma's actual recipe!

::Ingredients::
- 1 cup celery, chopped
- 3/4 cup onion, chopped finely
- 1 cup water
- 6 cups crumbled cornbread, already cooked
- 4 cups bread crumbs
- 4 eggs, beaten
- 1/2 cup butter, melted
- 1 tsp. sage
- 1 Tbsp.salt
- cups chicken broth
- 1 to 2 cans cream of chicken soup

::Directions::
Mix all the above together. Bake at 400F for about 30-45mins. OR until golden brown
  • you can also add chopped chicken to this recipe.

::Crock Pot Mac-N-Cheese::

::Ingredients::
- 2 cups uncooked elbow macaroni
- 4 tablespoons butter
- 2 1/2 cups grated sharp cheddar cheese
- 3 eggs
- 1/2 cup sour cream
- 1 (10 3/4 ounce) can condensed cheddar cheese soup
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 teaspoon black pepper

::Directions::
Boil the macaroni in water for six minutes. Drain.
In a medium saucepan, mix butter and cheese. Stir until the cheese melts.
In slow cooker, combine cheese mixture and add the eggs, sour cream, soup, salt, milk, and pepper. Add the drained macaroni and stir again.
Cook on low for 2 1/2 hours, stirring occasionally.

::Poppy Seed Chicken Casserole::

::Ingredients::
- 6 chicken breasts
- 2 cans cream of chicken soup
- 1 cup (8oz.) sour cream
- 1 1/2 packs Ritz crackers
- 2 tsp. poppy seeds
- 1 stick butter

::Directions::
Boil chicken breast, when cooled cut chicken into small pieces and place in the bottom of a 13x9 casserole dish. Mix together cream of chicken soup and sour cream and pour over chicken. Crumble Ritz crackers and add poppy seeds in a bowl. Melt butter and pour of crumbled crackers. Put crackers over chicken and soup mixture. Bake at 350F for 45 minutes or until crackers are golden brown.

::Oven-Crisp Potato Wedges::

::Ingredients::

- 1 1/2 lbs. small red potatoes
- 1 Tbs. olive oil
- 4 tsp. finely minced garlic
- 3/4 tsp. salt
- 1/2 tsp. paprika
- 1/4 tsp. pepper

::Directions::
Preheat oven to 350F,  Quarter potatoes and place in a large bowl. Drizzle olive oil over potatoes and toss to coat well.
Sprinkle garlic, salt, paprika and pepper over potatoes; toss to coat well.
Line a baking sheet with foil and lightly spray with vegetable cooking spray. Arrange potatoes on prepared baking sheet. Roast for 20 mins., stirring once or twice during cooking.

::My Momma's Bacon Baked Beans::

*Another recipe my Mom has made since I was kid, love it!!!

::Ingredients::
- 5 15oz. cans Pork-n-Beans
- 3/4 cup brown sugar, (Light or Dark)
- 1/4 cup ketchup
- 1 Tbs. mustard
- 1/2 a pack of bacon

Mix first 4 ingredients in a 13x9 baking dish, Then with kitchen scissors
cut up the bacon into 1/2 inch pieces, and mix in with the beans.
Bake at 350F-400F degrees for about 45 mins.

::Southern Green Beans & Red Potatoes::

::Ingredients::
- 3 lbs. green beans
- 1/4 lb. salt pork
- 1/4 cup bacon grease
- 2 cups chicken broth (canned is fine)
- 2 to 3 tsp. each salt, pepper, garlic powder
- 12 small red potaotes, or more
- 1 onion, cut into slivers

::Directions::
Wash beans and drain, set aside to dry. Meanwhile lightly brown the salt pork in the bacon grease over med. heat turning often. for about 10 mins.
Toss green beans into pot, stirring them with a spoon to coat well with  the pork fat. Add 1/4 cup broth and seasonings. Cook over low-med. heat, covered tightly for 30 mins. or until beans are half done. While beans are cooking peel center strip from each red potato with potato peeler, at the end of 30 mins. add potatoes and onion to the beans, add 1/4 cup more broth if needed. cook covered tightly until potatoes are tender 25-30 mins. checking the pot to make sure a small amount of liquid remains. When potatoes are tender tilt the lid slighly off to one side of the pot and continue to cook until green beans are wilted about 15 mins.
