::Potato Salad::

::Ingredients:
- 5 lrg. potatoes (diced & cooked)
- 6 hard boiled eggs
- 1 med. onion, minced
- 3/4 cup celery (or 2 tsp. of celery)   
- dill pickle, diced
- 1/2 Tbs. dill pickle juice
- 1/4 tsp. dry mustard
- 1 Tbs. pimento, diced
- 1 cup mayonaise
- yellow mustard
- paprika
- salt & pepper

Mix mayonaise and mustard together first, use enough mustard that it becomes a light yellow.
Then combine the remaining ingredients together.

::My Momma's Potatoe-Peanut Butter Candy::

*This recipe is one that my Momma has made since I was kid!

::Ingredients::
- 1 lrg. potatoe, peeled & cooked
- 1 box Confectioners sugar       
- 1 small jar Peanut Butter

Mash potatoe with sugar, may take 1 pound or more. Mix until stiff. Sprinkle confectioners sugars on board. Roll out like dough.
Spread with peanut butter. Roll up like a jelly roll. Freeze it to get hard, Cut into slices.

::My Maw-n-Law's Haystack Candies::

*My Mother-n-law makes these alot, always a favorite!

Ingredients:
- 6 oz. chocolate chips
- 14 oz. peanuts- 12 oz.
- 4 oz. potatoe sticks

Melt chips in a double boiler (microwave also works), add peanuts and sticks. Drop on waxed paper to set

**Can also use - 12 oz. butterscotch chips OR White Chocolate

::My Chicken Tenders::

*Another recipe passed down from my Mother-n-law!


::Ingredients::
- Chicken (I use tenders) ~ Boneless/Skinless & Thawed   
- Self Rising Flour (enough to coat chicken)
- Salt
- Pepper
- Hot Sauce ~ Any Brand (1/2 cup - 1 cup you decide how hot you want it)
- Buttermilk (depending on bowl size,  I use one small pint gallon to 1/2 gallon jug)
- Veg. Oil

Place Chicken, Buttermilk, and Hot Sauce in a bowl to merinate overnight or at least 6 hrs.

Mix Self Rising Flour, salt, pepper together before cooking, place merinated chicken and coat well with flour mixture then fry it up, I use a Fry Daddy, on 400F OR Highest setting for 3-4 minutes. may need to flip chicken once.

::My "Very Own" Veggie Soup::

::Ingredients::
- Beef Stew Cubed (I buy this already in cubed form) ~  You can use Ground Beef
- 4-5 Lrg. Potatoes, diced
- 1 can Green Beans
- 1 can Corn
- 1 can Green Peas
- 1 can Black Eyed Peas
- 1 can Lima Beans
- 1 can Okra
- 1 med. Onion, diced
- 2 cans Tomato
- 1 can Tomato sauce OR I use a can of V8 Juice if I have it.

~You can add to this recipe if you like~
Place all the above ingredients into a slow cooker and cook on High 4-6 hrs.
